Recipe for a wonderful addition to any table to add a little pep!

Ingredients

  • 2 cups mixed berries (such as strawberries, blueberries, raspberries, blackberries)
  • 2 ripe mangoes, diced
  • 2 kiwis, peeled and sliced
  • 1 cup green grapes, halved
  • 1 cup pineapple chunks
  • 1 banana, sliced
  • 1 tablespoon honey (optional)
  • 1 tablespoon freshly squeezed lemon juice
  • Fresh mint leaves for garnish

Instructions

  • Prepare the Fruits: Wash all the fruits thoroughly under cold running water. Slice and dice the fruits as needed. Keep them in separate bowls.
  • Combine Fruits: In a large mixing bowl, combine the mixed berries, diced mangoes, sliced kiwis, halved grapes, pineapple chunks, and sliced bananas.
  • Dress the Salad:
    • Drizzle honey (if using) over the mixed fruits for a touch of sweetness.
    • Squeeze fresh lemon juice over the fruits to add a zesty flavour. Toss gently to coat all the fruits evenly.
  • Chill:
    • Cover the bowl with plastic wrap or transfer the salad to an airtight container.
    • Place the fruit salad in the refrigerator to chill for at least 30 minutes before serving. Chilling enhances the flavors and freshness of the fruits.
  • Serve:
    • Once chilled, give the fruit salad a gentle toss to redistribute any juices that may have settled.
    • Spoon the spring fruit salad into individual serving bowls or a large serving platter.
    • Garnish with fresh mint leaves for a burst of colour and added freshness.
